starter - chicken satay kebabs

24 bamboo skewers

Soak the skewers in water for two hours before grilling. Combine marinade ingredients in a bowl. Place chicken cubes in marinade, tossing to coat chicken. Cover and refrigerate for at least 3 hours. When ready, discard marinade and alternately thread pieces of chicken in a loose S shape about three or four pieces on to each skewer. Don't let it bunch up, the meat should be spread out so it will cook evenly. Light the grill. Once the grill is hot, you just throw the skewers onto the grill and cook over a high heat for two minutes on each side, until chicken is opaque or done to your liking. As soon as the kebabs are cooked, lift them onto a platter decorated with fresh butter lettuce leaves and little bowls of satay sauce for dipping.  Fill your glasses with Sparkling Wine...and discover how good life can be!                         serves: 12
