pure greed caramelised onion
Place the eggs, crèam fraîche, salt and pepper into a mixing bowl
and whisk by hand until smooth. Set aside. Place the well drained
caramelised onion into the bottom of the pre-baked pastry flan,
ensuring an even coating. Place the sliced goat cheese evenly over
the caramelised onion and the tomato slice in the middle. Pour the
cream mixture around the slices of cheese and sprinkle with thyme
leaves. Place the tart on the lowest rack, in a pre-heated oven set
at 200°C and bake for 25-30 minutes or until the mixture is just set
and firm to touch and the pastry is golden brown. Cool in the tin.
