2 tablespoons olive oil

Preheat oven to 200C. Heat olive oil in a frying pan. Season the lamb and add to the oil. Cook for 2 minutes each side and place in the oven. Cook for 15 minutes. Remove from oven and let rest for 10 minutes before serving. 


to plate up:

Divide mashed potato among serving plates; top with racks of lamb, dollop with eggplant tappe. Serve with steamed green beans, if desired, then fill your glasses with Merlot Cabernet... and discover how good life can be!                                                            serves 4
